Review Highlights

Arpège is the three-Michelin-star restaurant of Chef Alain Passard in Paris's 7th arrondissement — a landmark of French fine dining that made world headlines in 2001 when Passard removed meat from the menu to focus entirely on vegetables. He operates three private gardens that supply almost everything served, with the menu changing up to five times a week depending on what is at peak freshness. Alexander visited à la carte with his daughter, sharing two appetisers and two mains.

  • ·Warm and cold soft-boiled egg — the 36-year-old Arpège signature: a poached egg yolk set in whipped crème fraîche with aged sherry vinegar, chives, maple syrup, and sea salt; warm and cold in the same bite; "unbelievably good"
  • ·Trilogy of dumplings in tomato and basil consommé — three filled dumplings in a delicate, elegant broth; guests are invited to guess the filling of each — described as a fun, playful course
  • ·Gazpacho with zucchini, white celery, and mustard ice cream — "sounds unusual; on the tongue, it's incredible"; praised for its balance and perfectly smooth texture
  • ·Lobster in yellow Jura wine sauce — served with cabbage, clams, potato, and green beans; "a great example of traditional French cuisine — the lobster is perfect, the sauce is wonderful, and the portion is huge"
  • ·Beet tartare — beet standing in for beef, with cream of lentil and garlic as the fake egg white, a carrot yolk, egg-less carrot and mustard mayo, and beetroot caramel; "I was judging this the moment they put it in front of me — then I tasted it, and I take it back. Amazing execution"
  • ·Candied tomato dessert — stuffed tomato with 16 secret flavours, prepared tableside in an orange, lemon and vanilla syrup; served with verbena ice cream and edible flowers; "it had a huge build-up and did not disappoint"

Alexander's verdict: a chef who has not gone mad — just one who travels into the vegetable patch with bravery, curiosity, and humility. He left pleasantly surprised, preferring the all-vegetable dishes over the protein courses — an admission he did not expect to make walking in. Minor service inconsistency after dessert and a cramped dining room were the only friction points. Total for two: just over €1,500. "In dish after dish, Chef Passard and his team showed pure genius in making vegetables the stars of the show."
