Review Highlights
Cocina Hermanos Torres is a three-Michelin-star restaurant in Barcelona's Les Corts neighbourhood, opened in 2018 by twin chefs Javier and Sergio Torres in a converted former warehouse — originally a Michelin tire center. The 800-square-meter space places the open kitchen at its center, with diners seated around it as spectators. Alexander visited for the tasting menu at €350 wine pairing tier, spending €940 for two.
- ·Warm squid tartar with imperial beluga caviar in cold chicken broth — a surf-and-turf opener; "the cold chicken broth is the most surprising — creating something so special from such a simple ingredient is very difficult"; all elements in perfect harmony in one spoonful
- ·Maresme green peas with tapioca pearls, fried bread and Iberian ham sauce — Catalonia's prized seasonal pea variety, in season March to May; "I love the simplicity here — bread, ham and peas"; Alexander liked it so much the server offered a second portion
- ·White asparagus from Navarra with mussels, saffron and tarragon — "asparagus is in season and it is perfect — an outstanding dish; I really enjoy the geometry"
- ·Suckling pig with tamarind and plum — an off-menu addition from the kitchen; "one of the most delicious pork dishes of my life, there's no question about it — the crispy skin, the gorgeous texture, the powerful flavour of the jus"
- ·Cured lamb with zucchini, mint and black garlic emulsions — lamb cured for one month; excellent in its own right but measured against the suckling pig that preceded it; "the last pork dish set the bar so high that, unfortunately, the lamb fell short"
- ·Strawberries, white vinegar and elderflower — a palate-cleansing dessert at the start of strawberry season; elderflowers wild-picked by staff around Barcelona; "a simple dish designed to bring back childhood memories"
Alexander's verdict: one of the great restaurant surprises of his life — a happy ending from the moment he walked in. The layout is unlike any fine dining room he'd encountered, the service team (led by sommelier Azahara) delivered a masterclass in warmth and professionalism, and the kitchen was brilliant throughout. The suckling pig was a personal all-time highlight. "The Torres twins are a dynamic duo who creatively tackle traditional Spanish cuisine and shape it in their own character. I already have my next reservation, and I cannot wait."
