  • ·Sweetbreads with asparagus, warm brown butter mayonnaise, and wild garlic — One of Alexander's all-time favorites. 'They have a delicate, mild taste with a smooth, luxurious texture — they taste a lot better than they sound.'
  • ·Kagoshima Wagyu beef tenderloin crusted in crispy chicken skin with foie gras and black truffle in a beef reduction — 'So rich. So tasty. Wagyu, foie gras, and truffle — this combination is always a win.'

Alexander calls JAAN his go-to restaurant in Singapore — a place he returns to every time he visits the city, and one of the few restaurants where he genuinely wants to come back. The meal for two totaled €1,100. Beyond the food, he credits the human connections, ambiance, atmosphere, and the stunning 70th-floor views as creating an experience that is hard to replicate. He closes by wishing Chef Westaway good luck on earning a third Michelin star.
